The project seeks to simultaneously achieve economic sustainability, sustain rural livelihoods and reduce wine’s environmental footprint. After assessing producer responses to climate change, a model for wine waste management through bio-refineries will be designed to valorise organic residues and increase the sustainability of wine farming. Additionally, biodiversity will be preserved through international collaboration and local conservation efforts, including selection of drought-resistant varietals and training of vineyard workers.
